  • 4 large zucchini (about 2 lbs.), halved and flesh scooped out
  • 1.5 Tbsp cooking oil, divided
  • 1 lb. Italian ground sausage
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 1/2 tsp Italian seasoning
  • 3/4 tsp salt, divided
  • 1/2 tsp freshly cracked black pepper, divided
  • 1/4 tsp garlic powder
  • 3/4 cup marinara sauce
  • 1/4 cup breadcrumbs
  • 1 cup shredded mozzarella

Instructions

  1. Preheat the Oven: Preheat the oven to 375°F. Prepare zucchini by halving and scooping out the flesh.
  2. Pre-Bake Zucchini: Brush zucchini halves with oil, season, and pre-bake for 15 minutes.
  3. Prepare Filling: Brown sausage, add onion, garlic, seasonings, marinara, breadcrumbs, and chopped zucchini flesh.
  4. Stuff Zucchini: Fill zucchini boats with sausage mixture, top with mozzarella.
