This Watermelon Mojito recipe is a refreshing and flavorful twist on the classic cocktail. Made with fresh watermelon juice, lime, mint, and a splash of rum (or sparkling water for a mocktail version), it’s the perfect summer drink.

Watermelon Juice:
- 8 large seedless watermelon cubes or 3/4 lb. – 1 lb. (about 1 – 1 1/2 cups juice)
Lime Juice Mixture:
- 2 ounces lime juice or juice of 1 lime (~1/4 cup)
- 1 teaspoon honey or agave nectar
Additional Ingredients:
- 15–20 mint leaves (~1/3 cup)
- 3–4 1/2 ounce white rum* (substitute sparkling water or kombucha for a mocktail version)

Instructions
- Prepare Watermelon Juice: In a blender, add the watermelon cubes and blend until smooth.
- Strain Juice (optional): If pulp is present, strain the juice through a mesh strainer into a jar or glass.
- Mix Lime Juice: To the watermelon juice, add lime juice and sweetener, stirring to combine.
- Muddle Mint: Divide mint leaves among glasses, muddle with a wooden spoon until fragrant.
- Assemble Drink: Fill glasses with ice, pour in watermelon lime juice, add rum (or sparkling water), and top with sparkling water.

Notes
- To make ahead: Watermelon juice can be made up to 48 hours in advance. Stir before using.
