  • 200-250g / 2-2.5 cups shredded Mozzarella

Meat

  • 5-6 Pork Sausages, meat squeezed from skins
  • 12 slices of Pepperoni

Vegetables

  • 1 large Pepper, thinly sliced
  • 1 small White Onion, thinly sliced
  • Handful of Black Olives, thinly sliced
  • Handful of sliced Jalapeños

Seasonings & Oil

  • Few pinches of Oregano
  • Olive Oil, as needed for frying

Instructions

  1. Cook the Sausage: Heat a large pan over medium heat with a dash of olive oil. Add the sausage meat, breaking it up with a wooden spoon, and fry until golden brown and cooked through. Remove the cooked sausage onto a plate.
  2. Cook the Vegetables: In the same pan with leftover fat, add the sliced onions and peppers. Fry until they have softened and become fragrant. Remove and set aside.
  3. Prepare the Tortillas: Stack the tortillas on a chopping board and slice them from the center down to the bottom edge. Lay them flat on a clean surface and start layering the fillings quarter by quarter — spread pizza sauce on the bottom-right quarter, add the cooked vegetables above it, then the cooked sausage on the top-left quarter, and finish with shredded mozzarella cheese.
  4. Fold the Wraps: Carefully fold the tortilla by bringing up the sauce quarter over the veggies, then fold over the sausage section, and finally fold over the cheese quarter. Press down gently to seal the filling inside. If the tortillas feel stiff, warm them slightly in the microwave to make folding easier.
