A refreshing and colorful Summer Peach Watermelon Salad bursting with flavors of sweet fruits and tangy dressing. This salad is perfect for picnics, potlucks, or as a light and healthy side dish.

For the salad
- Half a small watermelon
- 1 cucumber
- 3 tomatoes
- 2 peaches
- 2 tbsp zaatar
- A handful of pine nuts
- A handful of goji berries
- 4 springs of fresh basil
For the dressing
- Juice from one lemon
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 1/4 tsp sea salt
- 1/4 tsp ground black pepper
Instructions
- Slice the fruits and veggies: Cut the watermelon into small triangles. Slice the cucumber, tomatoes, and peaches thinly.
- Arrange: Place the fruits and vegetables on large plates.
- Prepare the dressing: Whisk lemon juice, balsamic vinegar, olive oil, salt, and pepper in a small bowl.
- Drizzle: Pour the dressing over the salad, then season with zaatar, sea salt, and black pepper.
- Garnish: Top with pine nuts, goji berries, and basil. Optionally, add more balsamic vinegar or pomegranate molasses.
- Serve: Enjoy this refreshing salad!
Notes
- You can substitute zaatar with dukkah or a custom spice blend.
