Ingredients

  • 1 cucumber
  • 3 tomatoes
  • 2 peaches
  • 2 tbsp zaatar
  • A handful of pine nuts
  • A handful of goji berries
  • 4 springs of fresh basil

For the dressing

  • Juice from one lemon
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1/4 tsp sea salt
  • 1/4 tsp ground black pepper

Instructions

  1. Slice the fruits and veggies: Cut the watermelon into small triangles. Slice the cucumber, tomatoes, and peaches thinly.
  2. Arrange: Place the fruits and vegetables on large plates.
  3. Prepare the dressing: Whisk lemon juice, balsamic vinegar, olive oil, salt, and pepper in a small bowl.
  4. Drizzle: Pour the dressing over the salad, then season with zaatar, sea salt, and black pepper.
  5. Garnish: Top with pine nuts, goji berries, and basil. Optionally, add more balsamic vinegar or pomegranate molasses.
