Description

A light and creamy strawberry mousse made with cream cheese or coconut cream for a dairy or dairy-free option. It features fresh strawberries blended with yogurt or additional cream base and a sweetener, creating a smooth, refreshing dessert perfect for any occasion.

Ingredients

Scale

Base

  • 8 oz cream cheese or coconut cream
  • 4 oz yogurt or additional cream cheese or coconut cream

Sweetener

  • 1 cup powdered sugar or sugar free alternative

Fruit

  • 5 medium size strawberries

Optional Flavoring

  • 1/4 tsp vanilla bean paste

Instructions

  1. Prepare the cream base: If using cream cheese, allow it to come to room temperature to ensure smooth blending. For coconut cream, open the can and verify that the contents are thick and creamy; discard if hard or flaky.
  2. Prepare the strawberries: Remove the stems from the strawberries, then blend or mash them until pureed using a blender, food processor, or by hand.
  3. Combine ingredients: Add the softened cream cheese or coconut cream, yogurt or additional cream, powdered sugar or sweetener, and optional vanilla bean paste to the strawberry puree.
  4. Blend the mixture: Blend all the ingredients together until completely smooth using a food processor, blender, or hand mixer for a light, fluffy texture.
  5. Chill and serve: Transfer the mousse into serving dishes, refrigerate for at least 1-2 hours to allow it to thicken and develop flavors before serving.

Notes

  • Ensure the cream cheese is at room temperature to avoid lumps.
  • Coconut cream must be thick and creamy; watery or flaky coconut cream will not yield proper texture.
  • The mousse thickens significantly after chilling, so refrigerate for best results.
  • For a sugar-free version, use a powdered sugar substitute that measures equally.
  • Fresh strawberries provide the best flavor, but frozen can be used if thawed properly.
