- 2 Tbsp butter
- 1/2 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
Turkey Filling
- 2 Tbsp olive oil, divided
- 1 lb ground turkey
- 1 cup onion, chopped
- 2 carrots, peeled and diced small
- 2 ribs celery, diced small
- 3 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 2 Tbsp flour (gluten free optional)
- 1 Tbsp tomato paste
- 1 cup chicken broth
- 1 Tbsp Worcestershire sauce
- 2 tsp fresh thyme, chopped
- 2 tsp fresh rosemary, chopped
- 1/2 cup frozen corn
- 1/2 cup frozen peas
Instructions
- Preheat Oven: Set your oven to preheat at 400 degrees Fahrenheit to prepare for baking the assembled shepherd’s pie.
- Cook Potatoes and Cauliflower: Boil the Yukon gold potatoes and cauliflower florets in a large pot until tender, about 15-20 minutes. Drain well and transfer to a large mixing bowl.
- Mash Topping: Add Greek yogurt, milk, chicken broth, butter, garlic powder, salt, and pepper to the potatoes and cauliflower. Mash together until smooth and creamy. Set aside.

- Make Gravy: Pour in chicken broth and Worcestershire sauce. Stir in fresh thyme and rosemary. Bring to a simmer and cook until the mixture thickens, about 5 minutes.
- Stir in Vegetables: Add frozen corn and peas to the skillet, stirring to combine all ingredients evenly.
- Assemble: Transfer the turkey filling mixture into a baking dish. Spread the mashed potato and cauliflower topping evenly over the top.
- Bake: Place the dish in the preheated oven and bake uncovered for 25-30 minutes or until the top is golden and the filling is bubbly.
- Rest and Serve: Let the shepherd’s pie rest for 5 minutes before serving to allow it to set slightly for easier slicing.
