Chuck Roast:

- 2 1/2 to 3 pounds beef chuck roast

Au Jus:
- 2 (1-ounce) packages dry onion soup mix
- 2 cups water
- 2 (14.5-ounce) cans beef broth
Assembly:
- 6–8 slices Swiss or provolone cheese
- 6–8 crusty rolls
Instructions
- Sear the Chuck Roast: Heat olive oil in a large skillet and season the chuck roast with salt and pepper. Sear on all sides.
- Transfer to Slow Cooker: Move the roast to the slow cooker, add onion soup mix, water, and beef broth. Cook on high for 4-6 hours or low for 8-10 hours.
- Shred and Serve: When tender, shred the meat, assemble sandwiches with cheese, and broil until melted. Serve with au jus for dipping.

- Using a frozen roast: No need to thaw, just increase cooking time.
