For the Beef
- 3 lbs beef chuck roast
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 1/2 tsp salt
- 1/4 tsp pepper
- 1 Tbsp brown sugar
- 2 Tbsp Worcestershire sauce
- 1 white onion, sliced
- 1 cup barbecue sauce (e.g., Arby's barbecue or any preferred brand)
For Serving
- 8 hamburger buns
- Arby’s sauce (or any barbecue sauce)
- Horsey sauce (horseradish mayo)
- Cheddar cheese slices (or nacho cheese, or Cheez Whiz)
Instructions
- Prepare the beef: Place the chuck roast in the slow cooker and evenly sprinkle with onion powder, garlic powder, salt, pepper, and brown sugar. Pour Worcestershire sauce over the meat.
- Add onions and sauce: Slice the onion into rings and layer on top of the roast. Pour barbecue sauce over the onions and beef.
- Cook: Cover the slow cooker and cook on low heat for approximately 9 hours until the beef is tender and easily shreddable.
- Shred the beef: Remove the cooked beef from the slow cooker and transfer to a plate. Using two forks, shred the beef into bite-sized pieces, discarding excess fat. Remove all but about ½ cup of the cooking juices from the slow cooker; you may leave the onions in if desired.
- Combine: Return the shredded beef to the slow cooker with the juices, stirring to combine. If the mixture appears greasy, skimp on excess fat with paper towels.
- Toast buns: Toast the hamburger buns if preferred to add a bit of crunch and flavor.
- Assemble sandwiches: Spoon the shredded beef mixture onto the bottom half of each bun, top with slices of cheddar cheese, then drizzle with Arby’s sauce and horsey sauce. Cap with the top bun and serve.
