Instructions

  1. Heat olive oil: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Brown the sausage slices for 2 minutes per side. Set aside.
  2. Cook chicken: Add chicken, salt, and pepper to the skillet. Cook until browned, about 4-5 minutes.
  3. Sauté veggies: Add remaining olive oil, onion, and bell pepper to the skillet. Sauté until softened.
  4. Add aromatics: Stir in garlic and tomato paste. Add rice and toast for 1-2 minutes.
  5. Combine ingredients: Return sausage and chicken to the skillet. Add spices, fire-roasted tomatoes, and chicken broth. Stir to combine.
  6. Simmer: Bring to a boil, cover, reduce heat, and simmer for 20-25 minutes until rice is tender, stirring occasionally.
  7. Season and garnish: Adjust seasoning if needed. Garnish with green onions before serving.
