- 2 Tbsp honey (plus more for drizzling)

- 2 tsp dried thyme
- Salt and pepper, to taste
- 1/2 a lemon, juiced
- 1 Tbsp fresh parsley, chopped (for garnish)
Instructions
- Preheat oven: Preheat the oven to 400F (205C).
- Prepare carrots: Peel and chop carrots into 1.5 to 2-inch pieces.
- Season carrots: In a baking dish, combine carrots, olive oil, honey, garlic, thyme, salt, and pepper. Toss to coat evenly.
- Roast: Roast the carrots in the oven for 30-45 minutes, tossing halfway through.
- Finish: Remove from oven, toss with lemon juice and parsley. Drizzle with honey and season to taste. Serve hot.
