Pasta:

  • 16 ounce package penne pasta

Shrimp:

  • 3 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 pound uncooked shrimp, peeled, deveined, tails removed
  • 1 tablespoon dried parsley

Sauce:

  • 2 tablespoons all-purpose flour
  • 1 cup chicken broth
  • 1 cup milk
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese, divided

Instructions

  1. Preheat Oven: Preheat oven to 350 degrees F.
  2. Cook Pasta: Cook penne pasta according to package instructions, drain, and set aside.
  3. Cook Shrimp: In an oven-safe skillet, melt 1 tablespoon butter and olive oil. Cook garlic, then add shrimp and parsley. Cook until shrimp turns pink. Remove shrimp from skillet.
  4. Make Sauce: In the same skillet, melt remaining butter. Add flour, whisk until smooth. Gradually add chicken broth and milk, whisking until smooth. Add lemon juice, salt, and pepper. Stir in Parmesan and 2 tablespoons of mozzarella until melted.
  5. Combine Ingredients: Add 3/4 of the shrimp and pasta to the sauce. Mix well to coat. Place remaining shrimp on top and sprinkle with remaining mozzarella.
  6. Bake: Bake for 10 minutes until cheese melts and browns slightly.
