Pasta:
- 16 ounce package penne pasta
Shrimp:
- 3 tablespoons butter, divided
- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 1 pound uncooked shrimp, peeled, deveined, tails removed
- 1 tablespoon dried parsley
Sauce:
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup milk
- 1 tablespoon lemon juice
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup grated Parmesan cheese
- 1/4 cup shredded mozzarella cheese, divided
Instructions
- Preheat Oven: Preheat oven to 350 degrees F.
- Cook Pasta: Cook penne pasta according to package instructions, drain, and set aside.
- Cook Shrimp: In an oven-safe skillet, melt 1 tablespoon butter and olive oil. Cook garlic, then add shrimp and parsley. Cook until shrimp turns pink. Remove shrimp from skillet.
- Make Sauce: In the same skillet, melt remaining butter. Add flour, whisk until smooth. Gradually add chicken broth and milk, whisking until smooth. Add lemon juice, salt, and pepper. Stir in Parmesan and 2 tablespoons of mozzarella until melted.
- Combine Ingredients: Add 3/4 of the shrimp and pasta to the sauce. Mix well to coat. Place remaining shrimp on top and sprinkle with remaining mozzarella.
- Bake: Bake for 10 minutes until cheese melts and browns slightly.
