- 6 tablespoons low-sodium soy sauce
- 1 tablespoon hoisin sauce
- 3/4 tablespoon apple cider vinegar
- 2 tablespoons honey
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon fresh minced ginger
- 2 teaspoons minced garlic
- 2 tablespoons cornstarch
- 1/2 cup water
Chicken and Vegetables
- 1 pound cubed boneless skinless chicken breasts cut into 1-inch cubes
- Salt and pepper to taste
- 1 1/2 cups broccoli florets
- 1 chopped red bell pepper
- 1 chopped green bell pepper
- 2/3 cup roasted unsalted cashews
- Toasted sesame seeds and chopped green onions for garnish
Instructions
- Sauce: In a medium saucepan, combine all sauce ingredients and whisk over medium heat until thickened. Set aside.
- Chicken and Vegetables: Preheat oven to 400°F. Season chicken, place on a sheet pan, drizzle with half the sauce, bake for 8 minutes. Add vegetables and cashews, coat with sauce, bake for another 8-12 minutes.
- Drizzle with remaining sauce, serve over rice, garnish with sesame seeds and green onions.
