Sausage and Vegetables

  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 medium onion, sliced
  • 3 medium bell peppers (any colors), sliced
  • 2 cloves garlic, minced
  • Salt & pepper to taste

Instructions

  1. Brown the sausage: Heat the olive oil in a skillet over medium-high heat. Add the sliced smoked sausage and sear until browned and crispy on all sides, about 8-10 minutes. Once browned, transfer the sausage to a plate to set aside.
  2. Sauté onions and peppers: In the same skillet, add the sliced onions. Sauté for 2-3 minutes, adding a bit more olive oil if the pan looks dry. Then add the sliced bell peppers. Continue cooking until the peppers are tender-crisp with a slight char, which enhances their flavor.
  3. Add garlic: When the vegetables are nearly done, stir in the minced garlic. Cook for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Combine sausage and season: Return the browned sausage to the skillet with the vegetables. Stir everything together to combine and heat through. Season with salt and pepper to taste.
