  • 4 cups zucchini, half moons

Instructions

  1. Brown the Sausage: In a large pot, brown the Italian sausage with chopped onion. Drain any excess fat.
  2. Add Aromatics: Stir in minced garlic and cook for 1-2 minutes until fragrant.
  3. Add Vegetables: Add celery, green pepper, red pepper, sugar, salt, black pepper, Italian seasoning, fire-roasted tomatoes, and chicken stock. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  4. Finish Soup: Add zucchini and simmer for an additional 10 minutes until vegetables are tender.
