Description

These Santa Hat Cheesecake Bites are a delightful, cute, and healthier dessert option featuring a cookie crust, creamy tofu and peanut butter filling, topped with melted chocolate, vanilla frosting, and fresh strawberries shaped like festive Santa hats.

Ingredients

Scale

Crust

  • 2 cups plain cookies
  • 2 tbsp sugar
  • 1/2 cup coconut oil
  • 1/4 tsp vanilla
  • dash of salt

Filling

  • 7 oz tofu (about 1/2 box)
  • 1/2 cup peanut butter
  • 1/2 cup chocolate chips – melted
  • 1/4 cup maple syrup
  • 1/4 cup dairy free milk
  • 1/2 tsp vanilla
  • dash of salt

Topping

  • vanilla frosting
  • strawberries

Instructions

  1. Prepare the crust: Start by adding the cookies to the food processor. Pulse until the cookies form a fine powder.
  2. Mix crust ingredients: Add sugar, coconut oil, vanilla, and a dash of salt to the cookie powder. Pulse again until well combined.
  3. Form crust in muffin pan: Line a muffin pan and add about 1 tablespoon of the crust mixture to each muffin cup. Use your finger to firmly pat the crust down evenly. Set aside.
  4. Make the cheesecake filling: Add tofu, peanut butter, melted chocolate chips, maple syrup, dairy-free milk, vanilla, and a dash of salt to the food processor. Blend until smooth and creamy.
  5. Assemble the cheesecake bites: Spoon the filling evenly into each muffin cup over the crust.
  6. Chill: Refrigerate the filled muffin pan until the chocolate hardens and the cheesecake sets, about 30-60 minutes.
  7. Decorate: Fill a piping bag with vanilla frosting and frost the top of each cheesecake bite.
  8. Add the Santa hat: Place a strawberry on top of each frosted bite. Pipe a little extra frosting on the tip of the strawberry to create the appearance of a Santa hat.
  9. Serve: Your Santa Hat Cheesecake Bites are ready to enjoy!
