Instructions
- Prepare the crust: Start by adding the cookies to the food processor. Pulse until the cookies form a fine powder.
- Mix crust ingredients: Add sugar, coconut oil, vanilla, and a dash of salt to the cookie powder. Pulse again until well combined.
- Form crust in muffin pan: Line a muffin pan and add about 1 tablespoon of the crust mixture to each muffin cup. Use your finger to firmly pat the crust down evenly. Set aside.
- Make the cheesecake filling: Add tofu, peanut butter, melted chocolate chips, maple syrup, dairy-free milk, vanilla, and a dash of salt to the food processor. Blend until smooth and creamy.
