Lime Cilantro Drizzle:
- 1 tablespoon lime juice
- 1/2 teaspoon lime zest
- 1 teaspoon thyme leaves
- 1 tablespoon minced cilantro
- pinch of sea salt
- 1 tablespoon extra virgin olive oil
Poached Salmon:
- 2 8–ounce salmon fillets
- 1 yellow onion sliced
- 1 teaspoon sea salt
- 2 tablespoons olive oil
- 1 tablespoon honey
- 1 can of coconut milk
- 3 to 5 thyme sprigs
Instructions
- Make the lime cilantro drizzle: Mix all drizzle ingredients, set aside.
- Prepare poached salmon: Heat oil, cook onion with salt, add honey and coconut milk. Add salmon and thyme, simmer gently until cooked.
- Thicken the sauce: Reduce coconut sauce until thick, return salmon to heat through.
- Serve: Plate salmon, remove thyme sprigs, spoon sauce, and drizzle with lime cilantro mixture.
Notes
- Add as little water as possible to at least halfway cover the salmon to reduce sauce time.
- The coconut milk sauce should be rich and thick after reduction.
