  • 68 leaves fresh mint
  • 2 small strawberries sliced
  • 2 raspberries
  • 1 ounce light rum

Blue Layer:

  • 1/2 ounce lime juice fresh-squeezed
  • 1/2 ounce simple syrup
  • 68 leaves fresh mint
  • 4 blueberries
  • 2 blackberries
  • 1 ounce light rum
  • For garnish: additional berries and mint leaves

Instructions

  1. Red layer: In a cocktail shaker or mixing glass, combine 1/2 ounce lime juice, 1/2 ounce simple syrup, mint leaves, strawberries, and raspberries. Muddle the ingredients to release flavors. Add 1 ounce rum, stir, and pour into a glass over ice. Garnish with more berries and mint.
  2. Blue layer: In another shaker, repeat the process with blueberries, blackberries, lime juice, simple syrup, mint, and rum. Pour over the red layer in the glass. Top with club soda and garnish. Serve chilled.

Notes

  • You can use granulated sugar instead of simple syrup.
