Caramel Apple Truffles

  • ⅓ cup apple cider caramel sauce
  • 3 tablespoons freeze dried apples, ground to powder (optional)

Chocolate Coating

  • ⅓ cup semi-sweet chocolate chips
  • ½ teaspoon cold pressed refined coconut oil
  • 1 packet green apple Pop Rocks candy


Instructions

  1. Prepare Apple Cider Caramel Sauce: Make the caramel sauce according to the original recipe or use store-bought caramel or maple syrup caramel substitution. Store any leftover sauce in a glass jar refrigerated for later use.
  2. Crush Rice Cakes: Line a baking sheet with parchment paper. Place the rice cakes in a Ziploc bag and crush them into small pebble-sized pieces using your hand or a rolling pin. Depending on your flavor choice, use plain, caramel, or apple cinnamon rice cakes.
  3. Mix Truffle Base: Transfer crushed rice cakes to a medium mixing bowl. Stir in the salt and the apple cider caramel sauce with a spatula. The caramel should be warm enough to handle but cooling so you can shape the truffles.
  4. Shape Truffles: Use a small cookie scoop to portion equal-sized amounts of the mixture. Roll each portion into balls by hand, which may be sticky. Place the shaped truffles on the prepared baking sheet.
