Guacamole Base

  • 3 ripe avocados
  • ½ small red onion, diced
  • ¼ cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeds removed and finely diced
  • 2 garlic cloves, minced
  • 1 lime, juiced
  • ½ teaspoon sea salt

Toppings

  • ¾ cup pomegranate seeds, divided
  • Extra cilantro (optional, for garnish)


Instructions

  1. Prepare ingredients: Dice the red onion, finely chop the cilantro, remove seeds and dice the jalapeno, mince garlic, and juice the lime. Set aside.
  2. Mash base ingredients: In a mixing bowl, add the ripe avocados, diced red onion, chopped cilantro, diced jalapeno, minced garlic, lime juice, and sea salt. Use a fork to mash everything together until well combined but still slightly chunky for texture.
  3. Mix in pomegranate seeds: Add ½ cup of the pomegranate seeds into the mashed mixture and gently stir them in to evenly distribute.
  4. Serve and garnish: Transfer the guacamole to a serving bowl. Top with the remaining ¼ cup of pomegranate seeds and sprinkle extra cilantro on top for a beautiful red and green festive presentation.
