- 2 cups Water

- 1 tablespoon Chili flakes
- 1/2 teaspoon Salt
Instructions
- Cut the pineapple: Cut the pineapple into bite-sized cubes. Slice the Jalapeños and finely chop the ginger.
- Prepare pickling water: In a heavy-bottom pan, combine all the ingredients for the pickling water. Bring to a boil to dissolve the sugar.
- Add ingredients: Add the jalapeños and pineapple to the pickling water. Bring to a boil and simmer for 10 minutes.
- Adjust sweetness: Taste for sweetness and adjust by adding more sugar if needed.
- Store: Once cooled, store the Pineapple Cowboy Candy in a clean, airtight bottle. Serve immediately or refrigerate for later use.
