For The Piña Colada Smoothie
- 3 cups frozen pineapple chunks (about 1 pound/16 ounces)
- 1 cup coconut milk (light or full-fat canned coconut milk)*
- 1/2 cup pineapple juice or water
- 2–3 teaspoons honey, agave syrup, or pure maple syrup
- 1/8 teaspoon coconut extract
- Optional: 1 Tablespoon fresh lime juice
Optional Garnishes To Try:
- fresh pineapple wedge
- maraschino cherry (or fresh cherries for paleo)
- fresh mint leaves
- whipped coconut cream (or whipped cream)
Instructions
- Make The Smoothie: Combine frozen pineapple, coconut milk, pineapple juice (or water), honey or agave, and coconut extract. (Add lime juice, if using.)
- Blend: Puree until the smoothie is completely smooth, pausing to scrape down the sides, as needed.
- Taste & Adjust: Then, taste the smoothie and add more coconut extract, sweetener, or lime juice, to taste.
- Garnish & Enjoy: Pour the smoothie into glasses and top with your favorite garnishes.

- Coconut Milk: You can adjust based on your nutritional needs. Use coconut cream for a thick, rich smoothie, full-fat coconut milk for a medium-thick option, or lite coconut milk for a lower-fat option.
- Coconut Extract: Mimics the sweetened cream of coconut mixer used in a classic piña colada. Swap for rum extract or omit if preferred.
