These Peanut Butter Frozen Yogurt Bars are a delightful combination of creamy yogurt, rich peanut butter, and decadent chocolate, making for a perfect frozen treat.

For the Yogurt Bars:

  • 1 cup plain Greek yogurt
  • 1/2 cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts (optional)

For the Chocolate Coating:

  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare Yogurt Bars: Line a baking sheet with wax paper or a silicone baking mat.
  2. In a small bowl, combine plain Greek yogurt, creamy peanut butter, maple syrup or honey, and vanilla extract. Stir until smooth.

  3. Shape Bars: Use a cupcake or ice cream scoop to dollop mounds of the yogurt mixture on the lined pan. Press a popsicle stick onto each mound, then top with the remaining yogurt mixture. Flatten the mounds with a small offset spatula.
  4. Add Toppings: Sprinkle roasted and salted peanuts evenly on each mound.
  5. Freeze: Place the pan in the freezer for at least 2 hours until the bars are frozen solid.
  6. Coat with Chocolate: In a microwave-safe bowl, melt chocolate chips or chopped chocolate with coconut oil. Dip each frozen bar into the melted chocolate.
  7. Serve: Enjoy immediately or return the bars to the freezer. Thaw for 5-10 minutes before serving if frozen solid.

Notes
