Jam Filling:
- 2 1/4 cups frozen strawberries, chopped
- 3 tbsp granulated sugar
- 1 tbsp lemon juice
- 2 tbsp cornstarch
- 2 tbsp cold water
Chocolate Cups:
- 16 oz vegan semi-sweet or dark chocolate, chopped
- 2 tbsp coconut oil
Peanut Butter Filling:
- 2/3 cup natural peanut butter, stirred before measuring
- 2 tbsp vegan butter, softened
- 1/3 cup sifted confectioners’ sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
Garnish, Optional:
- 2 tbsp crushed freeze-dried strawberries
Instructions
- Jam Filling: In a small pot, cook strawberries until they release juices. Add sugar, lemon juice, and cornstarch slurry. Cook until thickened. Set aside.
- Chocolate Cups: Melt chocolate and coconut oil, line muffin tin with chocolate, chill.
- Peanut Butter Filling: Mix peanut butter, vegan butter, sugar, vanilla, and salt until thick.
- To Assemble: Place peanut butter puck and jam in chocolate cups, cover with more chocolate, garnish, and freeze.
- Serve: Chilled or at room temperature. Store in airtight container.
Notes
- Use fresh berries if frozen not available.
- Substitute store-bought jam if needed.
- Adjust peanut butter filling if using processed peanut butter.
