- 9 oz Oyster crackers (approximately 5 cups)
Toffee Mixture
- 1 cup Dark brown sugar (or light brown sugar)
- 1 cup Unsalted butter
- 1 tsp Vanilla extract
- 2 tsp Ground cinnamon, divided
Topping
- 3 tbsp Granulated sugar
- 3/4 tsp Kosher salt
Instructions
- Preheat and Prepare Baking Sheet: Preheat your oven to 350 degrees F. Line an extra-large rimmed baking sheet with aluminum foil and parchment paper to prevent sticking.
- Arrange Crackers and Mix Topping: Spread the oyster crackers evenly in a single layer on the prepared baking sheet. In a small bowl, combine 1 teaspoon of ground cinnamon, granulated sugar, and kosher salt; set aside.
- Make Toffee Mixture: In a small heavy-bottomed saucepan, melt the unsalted butter and stir in the dark brown sugar over medium heat. Bring the mixture to a boil and let it boil for 2 minutes, stirring occasionally to prevent burning. Remove from heat and stir in the vanilla extract and the remaining 1 teaspoon of cinnamon.
- Coat Crackers with Toffee: Pour the warm toffee mixture evenly over the oyster crackers on the baking sheet. Gently toss or stir to coat all crackers thoroughly.
- Bake: Bake the coated crackers in the preheated oven for 10 minutes, or until the mixture is bubbly and golden brown.
- Add Cinnamon Sugar Topping: Immediately after removing the crackers from the oven, sprinkle the reserved cinnamon sugar and salt mixture evenly over the hot crackers.
- Cool and Serve: Allow the snack mix to cool completely on the baking sheet; this will help the toffee set and become crisp. Once cooled, break apart any large clumps and serve.
Notes
- If parchment paper is unavailable, butter the aluminum foil or baking sheet to prevent sticking, as the toffee is sticky.
- Store the oyster cracker snack mix in an airtight container or resealable bag for up to one week to maintain freshness.
- To reheat and refresh the snack, place it in a single layer on a rimmed baking sheet and warm in a 325-degree F oven for about 5 minutes.
