Main Ingredients:
- 2 tablespoons butter
- 1 pound smoked sausage, sliced
- 1 cup diced onion
- 1/2 cup diced green pepper
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Additional Ingredients:
- 2 cups chicken stock
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (4 ounce) can green chilis
- 2 1/2 cups uncooked rotini pasta
- 1 cup heavy cream
- 2 cups shredded cheese (such as colby jack)
Instructions
- Cook Sausage and Vegetables: In a skillet over medium-high heat, cook butter, sausage, onion, and green pepper for 5-6 minutes.
- Add Aromatics: Stir in garlic and cook for 30 seconds.
- Cook Pasta: Add chicken stock, tomatoes, green chilis, and pasta. Boil uncovered for 15-18 minutes until pasta is tender.
- Finish Dish: Reduce heat, stir in cream and cheese until melted. Garnish with parsley and serve.

- Any type of shortcut pasta will work in this recipe.
- Feel free to use different types of sausage like kielbasa, chicken, or hot sausages for variety.
