Description

Chicken:

  • 1 lb boneless skinless chicken breasts

Sauce:

  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/2 cup dry white wine or chicken broth
  • 2 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flake

Additional:

  • 8 oz medium pasta (such as penne, fusilli, bowties, etc.)
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup parmesan cheese, freshly grated
  • Fresh basil, chopped or torn, for serving
  • Kosher salt and freshly ground black pepper, to taste

Instructions

  1. Prepare Chicken: Pat chicken breasts dry, season with salt and pepper, and brown in olive oil over medium-high heat. Set aside.
  2. Make Sauce: In the same skillet, sauté garlic in butter, add wine, chicken broth, cream, seasoning, and tomatoes. Simmer.
  3. Cook Pasta: Add pasta to the sauce, nestle chicken on top, cover, and simmer until pasta is cooked and chicken is done.
  4. Finish Dish: Remove chicken, stir in parmesan and basil, adjust seasoning, and serve with sliced or chopped chicken on top.
