For the Skillet Lasagna:
- 1 tablespoon olive oil
- 1/2 lb lean ground beef
- 2 cloves garlic, minced
- 3 cups marinara sauce
- 1 cup water
- 1/2 teaspoon Italian seasoning
- 9 lasagna noodles (not the no-boil variety)
- Kosher salt and freshly ground black pepper, to taste
For the Cheese Mixture:
- 1 cup ricotta
- 1/4 cup parmesan, freshly grated
- 1 cup mozzarella, grated
Instructions
- In a large skillet, heat olive oil over medium-high heat. Add ground beef, season with salt and pepper, and cook until browned. Add minced garlic and cook for an additional 30 seconds.
- Stir in marinara sauce, water, and Italian seasoning. Break lasagna noodles into 2-inch pieces and add to the skillet.
- Bring to a boil, then cover and simmer, stirring occasionally, until noodles are tender, about 15 minutes. Add more water if needed.
- In a small bowl, combine ricotta and Parmesan cheeses, season with salt and pepper.
- Once noodles are cooked, top with the ricotta mixture and sprinkle mozzarella on top. Cover and let rest until cheese melts, or place under the broiler to brown.
- Serve hot and enjoy!
