Graham Cracker Crust:
- 2 cups graham cracker crumbs
- 1/2 cup (1 stick) unsalted butter, melted
- 1/2 teaspoon salt
Lemon Cheesecake Filling:
- 2 (3 oz each) packages lemon jello
- 1 cup boiling water
- 3 (8 oz) packages cream cheese, softened
- 1 1/2 cups powdered sugar
- 2 cups heavy whipping cream, chilled
- Zest and juice from one lemon
Optional Toppings:
- Whipped cream, for serving
- Additional lemon zest, for serving
Instructions
- Prepare the Graham Cracker Crust: Grease a 9×9-inch baking dish. Combine graham cracker crumbs, melted butter, and salt. Press mixture into the bottom of the dish and chill.
- Prepare the Lemon Cheesecake Filling: Dissolve lemon jello in boiling water. In a separate bowl, beat cream cheese and powdered sugar. Add in jello mixture, whipping cream, lemon zest, and juice. Beat until smooth and thickened.
- Assemble the Cheesecake Bars: Pour the filling over the chilled crust. Refrigerate for at least 4 hours until set.
- Serve: Slice into squares and top with whipped cream and lemon zest if desired.
Notes
- You can adjust the sweetness by adding more or less powdered sugar.
- For a stronger lemon flavor, increase the amount of lemon zest and juice.
