Description

Delicious no-bake chewy caramel cookies made with a crunchy mix of cornflakes, rice krispies, and coconut, coated in smooth melted caramel. Perfect for a quick and easy treat that requires no oven and can be enjoyed right away or chilled for a firmer texture.

  • 2 cups cornflakes cereal
  • 1 cup rice krispies cereal
  • ½ cup unsweetened coconut

Caramel Sauce

  • 11 oz bag caramels, unwrapped
  • 3 TBSP milk


Instructions

  1. Prepare the Dry Mixture: In a large mixing bowl, combine the cornflakes, rice krispies, and unsweetened coconut. Set this mixture aside to be coated later.
  2. Make the Caramel Sauce: In a medium saucepan, heat the unwrapped caramels and milk over low heat. Stir continuously for about 20 minutes until the mixture is completely smooth and melted. Remove the pan from heat once done.
  3. Combine Mixtures: Pour the warm caramel sauce over the dry cereal and coconut mixture. Stir immediately and thoroughly to ensure each piece is evenly coated with the caramel.
  4. Shape the Cookies: Using a medium-sized cookie scoop, portion out about 1.5 tablespoons of the mixture onto parchment or wax paper. Optionally, sprinkle with Halloween sprinkles and place an M&M candy on top for decoration.
  5. Set the Cookies: Allow the cookies to cool at room temperature until the caramel sets. To speed this up, you can place them in the refrigerator. Once set, the cookies are ready to serve and enjoy!
