Potato Poppers:
- 3 lbs. baby gold potatoes (small ones)
- 2 tablespoons unsalted butter
- 6 garlic cloves, minced
- 2 tablespoons Whole Grain mustard
- 2 tablespoons honey
- 2 teaspoons Dijon mustard
- 1/2 teaspoon crushed chili flakes
- 3 tablespoons fresh chives, minced
- Kosher salt and freshly cracked black pepper, to taste
For Serving:
- 1/4 cup sour cream
Instructions
- Cook Potatoes: Add potatoes to a large saute pan with olive oil over medium-high heat, then cover. Remove the lid every 5 minutes to stir them around.
- Cook Until Tender: Cook the potatoes until easily pierced with a knife, around 15 – 18 minutes depending on the size of your potatoes.
- Prepare Sauce: Add butter, minced garlic, and chili to the pan. Cook for 30 seconds stirring constantly. Add mustards and honey, then remove from heat. Season with salt and pepper.
- Finish and Serve: Finish with fresh chives and serve the potato poppers with a side of sour cream dipping sauce.
