A Mediterranean twist on the classic grilled cheese featuring a flavorful blend of cheeses, spinach, sun-dried tomatoes, and olives sandwiched between whole grain bread slices.

Spinach Mixture:
- 1 cup chopped spinach leaves
- 1/2 cup shredded mozzarella or cheese of choice
- 2 Tablespoons crumbled feta cheese
- 2 Tablespoons ricotta cheese or Greek yogurt
- 2 Tablespoons sun-dried tomatoes, drained and chopped
- 1 Tablespoon sliced black or Kalamata olives
For Sandwich:
- 4 slices whole grain bread or crusty bread of choice
- 2 Tablespoons butter
Instructions
- Prepare Spinach Mixture: Microwave spinach until wilted. Mix in mozzarella, feta, ricotta, sun-dried tomatoes, and olives.
- Assemble Sandwiches: Spread mixture on bread slices. Top with remaining bread slices. Spread butter on top.
- Cook: Cook sandwiches in a skillet over medium-low heat until golden brown and cheese is melted, about 2 minutes per side. Slice and serve.
Notes
- I recommend eating the sandwiches fresh for the best taste, but they can be refrigerated for up to 24 hours.
- To store, place in an airtight container.
- To reheat, warm in a skillet or air fryer until heated through.
