Chicken:
- 1.7 pounds skinless boneless chicken breasts (2 large chicken breasts)
- Salt and pepper
- 3 tablespoons flour (gluten-free optional)
- 2 tablespoons olive oil
Sauce:
- 1/3 cup chopped onion (white or yellow)
- 5 cloves garlic, finely chopped
- 4 oz oil-packed sun-dried tomatoes, chopped
- 1/2 cup dry white wine or chicken stock
- 1 cup heavy cream
- 1/2 cup shredded Parmesan, room temperature
- 1/2 cup chicken stock, or more if needed
- Fresh basil, for garnish
Instructions
- Cook Chicken: Season chicken with salt and pepper, coat in flour, and sear in olive oil until browned and cooked through. Set aside.
- Prepare Sauce: In the same skillet, sauté onion, garlic, and sun-dried tomatoes. Deglaze with wine, then add cream and Parmesan. Adjust consistency with chicken stock.
