Chicken and Marinade

  • 1 whole chicken (1.5-1.6kg / 3.3-3.5lb)
  • 3 cloves garlic, minced
  • 1 lemon, juice plus squeezed halves
  • 2 tbsp vegetable oil

  • 1 tsp dried coriander
  • 1/2 tsp turmeric
  • 1 tsp smoked paprika
  • 1 tsp salt

  • 120g / 1/2 cup mango chutney, processed till smooth


Instructions

  1. Prepare the Marinade: In a bowl, mix together the vegetable oil, minced garlic, lemon juice, dried ginger, dried coriander, turmeric, smoked paprika, and salt to form a flavorful marinade.
  2. Marinate the Chicken: Rub the marinade all over the whole chicken, including inside the cavity. Place the squeezed lemon halves inside the cavity. Tie the legs together with kitchen twine and let the chicken marinate, covered, in the refrigerator for at least 30 minutes or up to 4 hours for maximum flavor.
  3. Preheat Oven and Ready Chicken: Preheat your oven to 190°C (375°F). Remove the chicken from the fridge and allow it to come to room temperature while the oven heats up.
  4. Roast the Chicken: Place the marinated chicken in a roasting pan and roast in the preheated oven for 45 minutes to begin cooking the bird evenly.
  5. Apply Mango Chutney Glaze: Take the chicken out of the oven and brush the smooth mango chutney thoroughly over the entire surface of the chicken to glaze it.
  6. Continue Roasting: Return the glazed chicken to the oven and roast for an additional 20 to 30 minutes until the internal temperature reaches 75°C (165°F) and the skin is a beautiful golden brown.
