Ingredients

Units Scale

For the Marinade:

  • 1 1/2 lbs boneless skinless chicken breasts, about 4 breasts, trimmed of excess fat
  • 1/4 cup lemon juice
  • 1/4 cup white wine vinegar (red wine vinegar can also be used)
  • 5 cloves garlic, minced
  • 2 Tbsp chopped fresh basil
  • 2 Tbsp chopped fresh mint
  • 2 Tbsp chopped fresh parsley
  • 1 1/2 tsp dried oregano
  • 1 tsp kosher salt
  • 1/41/2 tsp black pepper
  • 1/2 cup olive oil
  • 2 lemons, one sliced, one cut into wedges (optional)
  • Additional fresh parsley for garnish (optional)

Instructions

  1. Prepare chicken: Top cutting board with wax paper and place a chicken breast on top. Cover with another piece of wax paper and use a meat mallet to pound chicken to about 1 inch thick. Repeat with remaining chicken breasts.
  2. Marinate the chicken: In a resealable bag, combine lemon juice, vinegar, garlic, herbs, salt, pepper, and olive oil. Add chicken, seal bag, and massage marinade into the chicken. Marinate in the refrigerator for at least 1 hour.
  3. Grill the chicken: Preheat grill to MED/MED HIGH heat. Grill chicken for 5-6 minutes per side until cooked to 165°F. Char lemon slices if desired.
  4. Serve: Rest chicken, then top with lemon juice and parsley.

Notes

  • Calorie count listed is for one serving (one chicken breast) but may be lower due to olive oil not all being consumed.
  • For stovetop cooking, follow instructions and cook chicken in a grill pan or skillet.
