Korean Ground Turkey is a flavorful and easy-to-make dish that combines lean ground turkey with a delicious sauce, served over rice and accompanied by a refreshing cucumber and carrot salad.

- 1 cup long grain white rice
- 1 lb lean ground turkey
- 1 Tbsp sesame oil
- 2 garlic cloves, minced
- 1 bunch green onions, separate half for garnish
- 1 Tbsp fresh ginger, minced
- 3 stalks celery, about 1/2 cup chopped
- 4 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 2 1/2 Tbsp honey
- 1 tsp chili garlic sauce
- 1/2 tsp red pepper flakes
- 1 1/2 Tbsp white granulated sugar
- 1/4 tsp sea salt
- 1/4 cup rice vinegar
- 1 1/2 cup matchstick carrots
- 1 3/4 cup English cucumbers, thinly sliced

Instructions
- Cucumber and Carrot Salad: Mix sugar, salt, and rice vinegar in a bowl. Add matchstick carrots and thinly sliced cucumbers. Toss well and refrigerate.
- Rice: Cook rice according to package instructions.
- Korean Ground Turkey: Combine soy sauce, rice vinegar, honey, chili garlic sauce, and red pepper flakes in a bowl. In a skillet, heat sesame oil, add ground turkey, garlic, ginger, celery, and half of green onions. Flatten turkey, pour sauce over, and cook without stirring to caramelize. Add remaining green onions, mix, and serve over rice with cucumber carrot salad.
Notes
- Ground beef or ground chicken can be substituted for turkey.
- Any type of soy sauce or coconut aminos can be used.
- Sriracha is a suitable alternative for chili garlic sauce.
