- 1 lb Tri tip or sirloin steak tip
- 3 large scallions, cut into 1-inch pieces
- 6 oz Cremini or baby bella mushrooms (about six large mushrooms, halved or quartered)
Marinade
- 1/3 cup low sodium soy sauce
- 1/4 cup honey
- 2 TBSP hoisin sauce
- 1 TBSP sesame oil
- 1 TBSP freshly grated ginger
- 1 tsp Sriracha
- 4 cloves garlic, grated to a paste or finely minced
BBQ Sauce
- 1/3 cup hoisin sauce
- 1/3 cup ketchup
- 2 TBSP low sodium soy sauce
- 1 TBSP mirin (or rice wine vinegar)
- 2 tsp sesame oil
- 1 tsp Sriracha, more or less depending on your heat tolerance
Instructions
- Prepare the Marinade: In a mixing bowl, combine 1/3 cup low sodium soy sauce, 1/4 cup honey, 2 tablespoons hoisin sauce, 1 tablespoon sesame oil, freshly grated ginger, 1 teaspoon Sriracha, and grated garlic cloves. Whisk thoroughly until all ingredients are blended.
- Marinate the Beef: Cut the tri tip or sirloin steak tip into bite-sized pieces and place them in the marinade. Ensure all pieces are coated well. Cover and refrigerate for at least 1 hour, preferably longer for deeper flavor infusion.
- Prepare the BBQ Sauce: In a separate bowl, mix together 1/3 cup hoisin sauce, 1/3 cup ketchup, 2 tablespoons low sodium soy sauce, 1 tablespoon mirin (or rice wine vinegar), 2 teaspoons sesame oil, and 1 teaspoon Sriracha. Stir well and set aside.
- Assemble the Skewers: Thread the marinated beef pieces alternately with scallions and cremini mushrooms onto skewers. Be sure to leave a little space between pieces to allow heat circulation.
- Preheat the Grill: Heat your grill to medium-high heat, around 400°F (200°C), ensuring the grates are clean and lightly oiled to prevent sticking.
- Grill the Skewers: Place the skewers on the grill. Cook for about 3 minutes per side, turning once or twice until the beef is cooked to your desired level of doneness and the vegetables are slightly charred.
- Brush with BBQ Sauce: During the last 2 minutes of grilling, brush each skewer generously with the prepared Korean BBQ sauce. Flip and brush again to build a flavorful glaze.
- Serve: Remove the skewers from the grill and let them rest for a minute. Serve hot, optionally garnished with sesame seeds or additional chopped scallions for extra flavor and presentation.
