Ingredients
Scale
Donuts
- 3 large eggs, room temperature
- 1/4 cup Swerve Brown
- 1/4 cup Swerve Granular
- 1/4 cup almond milk, room temperature
- 1/4 cup butter, melted but not hot
- 1 tsp maple extract
- 1 cup almond flour
- 1/4 cup coconut flour
- 2 tsp baking powder
- 1/4 tsp salt
Maple Glaze
- 1/3 cup powdered Swerve Sweetener
- 2 tbsp heavy whipping cream
- 1 tsp maple extract
- Water, to thin as needed
- 4 pieces bacon, diced and cooked until crisp
Instructions
- Preheat the oven and prepare the pan: Preheat your oven to 325°F (163°C) and grease the donut pan thoroughly. If your pan only holds 6 donuts, plan to bake in batches.
- Blend the wet ingredients: In a high-powered blender or food processor, combine the eggs, Swerve Brown, Swerve Granular, almond milk, melted butter, and maple extract. Blend until completely smooth to ensure even mixing.
- Add dry ingredients: Add almond flour, coconut flour, baking powder, and salt to the blender. Blend again until the batter is well combined and smooth.
- Fill the donut pan and bake: Spoon the batter evenly into the prepared donut wells, filling each about three-quarters full. Bake for 15 to 20 minutes, or until the donuts are golden brown around the edges and feel firm when touched.
- Cool the donuts: Remove the pan from the oven and let the donuts cool in the pan for 10 to 20 minutes. Then carefully flip them out onto a wire rack and allow them to cool completely.
- Prepare the maple glaze: In a medium bowl, whisk together the powdered Swerve sweetener, heavy whipping cream, and maple extract. Add water one teaspoon at a time, whisking until the glaze reaches a dippable consistency.
- Dip and garnish: Dip each cooled donut into the maple glaze, then return them to the wire rack. Immediately sprinkle with the crispy diced bacon pieces and allow the glaze to set for about 30 minutes before serving.
Notes
- Ensure eggs and almond milk are at room temperature to prevent clumping in the batter.
- You can adjust the sweetness by varying the amount of Swerve to taste.
- If you don’t have baking powder, use a combination of baking soda and cream of tartar as a substitute.
- For a dairy-free version, substitute butter and heavy cream with coconut oil and coconut cream, but note the flavor difference.
- The glaze consistency can be adjusted with water to make it thicker or thinner based on preference.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently before serving.
