Grilled Sirloin
- 2 pounds Beef Sirloin Picanha or Coulotte Roast
- 2 tablespoons extra virgin olive oil
- 1/4 cup SPG Rub
Cheese Sauce
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 1 cup whole milk
- 1/4 cup crème fraîche
- 2 tablespoons Dijon mustard
- 1 cup cheddar cheese
- 1/4 teaspoon kosher salt
- 1/4 teaspoon coarse black pepper
Sautéed Vegetables
- 2 tablespoons extra virgin olive oil
- 1 large green bell pepper, thinly diced
- 1/2 large sweet onion
Instructions
- Grilled Sirloin – Prepare grill for two-zone grilling. Score and season the roast. Grill over direct heat, then move to indirect heat until desired doneness. Rest before slicing.
