Green Goddess Sauce

- 1 tablespoon olive oil

- 4 thick slices whole-wheat bread (½ inch)
- 1 cup arugula (or watercress)
- 6 ounces fresh mozzarella cheese, sliced ¼ inch thick
- ⅓ English cucumber, thinly sliced
- 1 medium avocado, sliced
- ⅔ cup alfalfa sprouts
Instructions
- Make the Sauce: In a small mixing bowl, combine Greek yogurt, mayonnaise, grated garlic, chopped chives, tarragon, lemon zest and juice, olive oil, salt, and black pepper. Whisk the ingredients together thoroughly until you achieve a smooth and creamy sauce.
- Prepare the Bread: Spread approximately 2 tablespoons of the prepared green goddess sauce evenly on each slice of whole-wheat bread to add flavor and moisture.
- Assemble the Sandwich: Take two of the sauce-coated bread slices and layer each with half the arugula, mozzarella slices, thin cucumber slices, and avocado slices. Top each with a generous amount of alfalfa sprouts for crunch and freshness.
- Close the Sandwich: Place the remaining two slices of bread, sauce side down, on top of the prepared halves to complete the sandwiches.
