Dry Ingredients

  • ½ cup Granulated Sweetener (sugar-free brown erythritol, or coconut sugar, or brown sugar)
  • ½ cup Oat Flour (or all-purpose flour, lightly packed, swept)
  • ½ cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • ¼ teaspoon Salt


Instructions

  1. Preheat Oven: Preheat your oven to 350°F (180°C) and line an 8-inch by 8-inch brownie pan with parchment paper, lightly oiling the pan to prevent sticking.
  2. Melt Chocolate: In a microwave-safe bowl, melt 1/3 cup of the sugar-free chocolate chips together with the coconut oil. Allow the mixture to cool at room temperature for a few minutes.
  3. Mix Dry Ingredients: In a separate bowl, whisk together the oat flour, unsweetened cocoa powder, granulated sweetener, baking powder, and salt until well combined.
  4. Combine Wet Ingredients: In a large mixing bowl, whisk the Greek yogurt, egg, vanilla extract, almond milk, and the cooled melted chocolate mixture until smooth and fully incorporated.
  5. Incorporate Dry Ingredients: Sift the dry ingredient mixture into the wet mixture. Gently fold with a silicone spatula until just combined, being careful not to overmix.
  6. Add Chocolate Chips: Stir in the remaining 1/3 cup of sugar-free chocolate chips evenly throughout the batter.
  7. Pour Batter: Pour the prepared batter evenly into the lined brownie pan, spreading it out smoothly.
  8. Bake: Bake in the preheated oven for 20 to 23 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
