Main Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 2 garlic cloves, finely chopped
- 1 cup (200 g) long grain rice
- Juice and zest of 1 large lemon
- 2 1/2 cups vegetable stock
Additional Ingredients:
- 1/2 cup fresh parsley, chopped
- 1/2 cup fresh dill, chopped
- Salt and pepper to taste
Instructions
- Saute Onion: Heat olive oil in a large pan over medium heat. Cook the onion until softened, about 3-4 minutes.
- Add Garlic and Rice: Add garlic and cook for another minute. Stir in the rice and toast for 2-3 minutes.
- Combine Lemon and Stock: Mix in lemon juice, zest, and vegetable stock. Bring to a simmer.
- Cook Rice: Cover and simmer for 20 minutes until rice is tender and liquid is absorbed.
- Finish and Serve: Let it rest off the heat for 5-10 minutes. Stir in parsley and dill. Season with salt and pepper. Serve with lemon slices.
