Description

A delightful Greek Lemon Rice recipe that is bursting with fresh flavors of lemon, parsley, and dill. This aromatic and zesty rice dish makes a perfect side or light main dish.

Main Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 cup (200 g) long grain rice
  • Juice and zest of 1 large lemon
  • 2 1/2 cups vegetable stock

Additional Ingredients:

  • 1/2 cup fresh parsley, chopped
  • 1/2 cup fresh dill, chopped
  • Salt and pepper to taste

Instructions

  1. Saute Onion: Heat olive oil in a large pan over medium heat. Cook the onion until softened, about 3-4 minutes.
  2. Add Garlic and Rice: Add garlic and cook for another minute. Stir in the rice and toast for 2-3 minutes.
  3. Combine Lemon and Stock: Mix in lemon juice, zest, and vegetable stock. Bring to a simmer.
  4. Cook Rice: Cover and simmer for 20 minutes until rice is tender and liquid is absorbed.
  5. Finish and Serve: Let it rest off the heat for 5-10 minutes. Stir in parsley and dill. Season with salt and pepper. Serve with lemon slices.
