- 1/4 cup extra virgin olive oil
- 1 shallot, chopped
- 4 cloves garlic, chopped
- 2 tsp dried oregano
- 1 tsp chipotle chili powder
- 1 tsp honey
- 1–3 tbsp harissa sauce (or use hot sauce)
- 1 tbsp lemon zest
- Salt and black pepper
- 1 1/2 lb chicken breasts, cut into bite-size chunks
- 1–2 cups Tzatziki sauce
- 1/2 cup garlic tahini (recipe in notes)
Feta Fries
- 4 russet potatoes, cut into 1/4-inch-thick matchsticks
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- 1/4 tsp cayenne pepper
- 1/2 cup mixed herbs – dill, basil, parsley
- 1 tsp lemon zest
- 1 clove garlic, grated
- 2 tbsp toasted sesame seeds
- 1/2 cup crumbled feta cheese
Instructions
- Prepare the Chicken Skewers: In a bowl, mix olive oil, shallots, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add chicken and toss to coat. Let marinate for 10 minutes.
- Cook the Chicken: Preheat the oven to 450°F. Thread the marinated chicken onto skewers and bake for 20-25 minutes until cooked through and slightly charred.
- Make the Feta Fries: Toss potatoes with olive oil, garlic powder, cayenne, and pepper. Bake for 15-20 minutes, flip, and bake for an additional 15 minutes.
- Prepare the Feta Topping: In a bowl, combine herbs, lemon zest, garlic, sesame seeds, and feta. Toss the cooked fries with the feta mixture and season with salt.
- Serve: Serve the chicken skewers and feta fries with Tzatziki sauce and garlic tahini. Enjoy!
