Skewers

  • 1/4 cup extra virgin olive oil
  • 1 shallot, chopped
  • 4 cloves garlic, chopped
  • 2 tsp dried oregano
  • 1 tsp chipotle chili powder
  • 1 tsp honey
  • 13 tbsp harissa sauce (or use hot sauce)
  • 1 tbsp lemon zest
  • Salt and black pepper
  • 1 1/2 lb chicken breasts, cut into bite-size chunks
  • 12 cups Tzatziki sauce
  • 1/2 cup garlic tahini (recipe in notes)

Feta Fries

  • 4 russet potatoes, cut into 1/4-inch-thick matchsticks
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • 1/2 cup mixed herbs – dill, basil, parsley
  • 1 tsp lemon zest
  • 1 clove garlic, grated
  • 2 tbsp toasted sesame seeds
  • 1/2 cup crumbled feta cheese

Instructions

  1. Prepare the Chicken Skewers: In a bowl, mix olive oil, shallots, garlic, oregano, chili powder, honey, harissa sauce, lemon zest, salt, and pepper. Add chicken and toss to coat. Let marinate for 10 minutes.
  2. Cook the Chicken: Preheat the oven to 450°F. Thread the marinated chicken onto skewers and bake for 20-25 minutes until cooked through and slightly charred.
  3. Make the Feta Fries: Toss potatoes with olive oil, garlic powder, cayenne, and pepper. Bake for 15-20 minutes, flip, and bake for an additional 15 minutes.
  4. Prepare the Feta Topping: In a bowl, combine herbs, lemon zest, garlic, sesame seeds, and feta. Toss the cooked fries with the feta mixture and season with salt.
  5. Serve: Serve the chicken skewers and feta fries with Tzatziki sauce and garlic tahini. Enjoy!
