Chicken:

  • 1 lb boneless, skinless chicken breasts
  • 1/2 tablespoon olive oil

Pasta Salad:

  • 16 oz farfalle pasta cooked according to package directions
  • 1 pint cherry tomatoes halved
  • 1 cup cucumber diced or thinly sliced
  • 1/4 cup red onion diced
  • 1/4 cup pepperoncini thinly sliced
  • 1/3 cup kalamata olives halved
  • 3/4 cup crumbled feta cheese

Dressing:

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lemon juice Juice from 1 lemon
  • 1 teaspoon dijon mustard
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Prepare Chicken: Brush chicken with olive oil, sprinkle with salt and pepper, then grill until cooked through. Chop into large pieces.
  2. Cook Pasta: Boil farfalle pasta until al dente, then drain and let cool.
