Chicken:
- 1 lb boneless, skinless chicken breasts
- 1/2 tablespoon olive oil
Pasta Salad:
- 16 oz farfalle pasta cooked according to package directions
- 1 pint cherry tomatoes halved
- 1 cup cucumber diced or thinly sliced
- 1/4 cup red onion diced
- 1/4 cup pepperoncini thinly sliced
- 1/3 cup kalamata olives halved
- 3/4 cup crumbled feta cheese
Dressing:
- 1/2 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon lemon juice Juice from 1 lemon
- 1 teaspoon dijon mustard
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Prepare Chicken: Brush chicken with olive oil, sprinkle with salt and pepper, then grill until cooked through. Chop into large pieces.
- Cook Pasta: Boil farfalle pasta until al dente, then drain and let cool.
- Make Dressing: Whisk together olive oil, red wine vinegar, lemon juice, mustard, oregano, salt, and pepper.
- Assemble Salad: Combine all salad ingredients in a bowl, add dressing, and toss well. Chill before serving if desired.
