Ingredients
Scale
For the Lamb Chops
- 8 lamb chops, each approx. 1-inch thick
- Salt and pepper, to season
- ¼ cup olive oil
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, minced
- 1 tablespoon fresh rosemary, minced
- 1 tablespoon olive oil, for cooking
- 2 tablespoons butter, for cooking
Instructions
- Season: Generously season both sides of your lamb chops with salt and pepper to enhance their natural flavor.
- Prepare the garlic herb marinade: In a small bowl, combine the olive oil, minced garlic, fresh parsley, and fresh rosemary. Using a pastry brush, coat both sides of each lamb chop with the marinade. Discard any leftover marinade and let the chops marinate at room temperature for 30 minutes to absorb the flavors.
- Cook: Heat a large cast-iron skillet or frying pan over medium-high heat. Add the olive oil and swirl to coat the pan. Once the oil begins to smoke slightly, place the lamb chops in the skillet. Cook each side until lightly browned, about 3-4 minutes. Add the butter, flip the lamb chops, and continue cooking for another 4-5 minutes until they reach 125°F for medium-rare or 135°F for medium, as measured by a digital meat thermometer.
- Rest: Remove the lamb chops from the skillet and let them rest for at least 5 minutes to allow the juices to redistribute, ensuring a tender, juicy bite.
- Serve: Serve the lamb chops with homemade mint chutney or your favorite dipping sauce. Enjoy this savory and aromatic dish!
Notes
- If marinating for longer than 30 minutes, cover the lamb chops and store them in the refrigerator to keep them fresh.
- Allow the lamb chops to come to room temperature before cooking to ensure even cooking.
- The lamb can be marinated for up to 24 hours for more intense flavor.
- Store any leftovers in an airtight container in the refrigerator for 3-4 days.
