Garlic Butter
- 8 tsp (1 stick) butter
- 5 cloves garlic, minced
- 2 tbsp olive oil
- 3 sprigs thyme leaves, chopped
- 1 sprig rosemary leaves, chopped
- 1 sprig oregano leaves, chopped
- 8 sage leaves, chopped
- 1/4 tsp red pepper flakes
Dough
- 180 mL warm water (110ºF-115ºF)
- 10 grams instant dry yeast
- 5 grams white granulated sugar
- 15 grams extra virgin olive oil
- 280 grams bread flour, sifted
- 10 g kosher salt
Toppings
- 1/2 cup freshly grated parmesan cheese
- Flaky sea salt, for garnish
Instructions
- Make Garlic Butter: Melt butter with olive oil, minced garlic, chopped herbs (thyme, rosemary, oregano, sage), and red pepper flakes in a small saucepan over medium-low heat. Allow the mixture to infuse over low heat for 5 minutes without browning the butter. Turn off the heat and let it cool.
- Prepare the Bread Dough: In the bowl of a stand mixer with a dough hook, combine warm water, instant dry yeast, sugar, olive oil, sifted bread flour, and kosher salt. Knead on medium-high speed for 6-7 minutes until the dough pulls away from the sides and feels barely tacky, stretching without tearing.
- First Rise: Grease a large bowl, place the dough inside, cover, and let it rise in a warm place for about 1 hour until doubled in size.
- Preheat Oven: Preheat your oven to 450ºF (230ºC) as the dough finishes rising.
- Shape Rolls: Turn the dough onto a lightly floured surface. Using a bench scraper or butter knife, divide it into 12 equal pieces. Roll each piece into logs and tie them into knots. Place the knotted rolls back into the large bowl.
- Toss in Garlic Butter and Parmesan: Pour the cooled garlic herb butter and 1/4 cup parmesan cheese into the bowl with the rolls. Gently toss all together by hand to coat evenly.
- Prepare for Baking: Spray an 8×8-inch baking dish or 8-inch cake pan with baking spray. Place the coated rolls into the dish, then sprinkle the remaining parmesan cheese on top.
- Bake Rolls: Bake in the preheated oven for 12-15 minutes until golden and cooked through.
- Final Touch: Remove the rolls from the oven and while still warm, brush them gently with some more garlic-infused butter and sprinkle with flaky sea salt.
