Steak Bites
- 1 tablespoon olive oil
- 1 1/2 pound sirloin steak, cut into bite size pieces (or strip loin, tenderloin, strip steak, or rib eye)
- 1/2 teaspoon salt, or to taste
- 1/2 teaspoon pepper, or to taste
Garlic Butter Sauce
- 2 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat the oil: Add the olive oil to a large skillet and heat it over high heat until very hot to ensure a good sear on the steak bites.
- Cook the steak bites: Add the steak pieces to the skillet, seasoning them generously with salt and pepper. Let the steak cook undisturbed for at least 2 minutes to develop a golden-brown crust, then stir and continue cooking for another 2 minutes. Work in batches if your skillet is not large enough to avoid overcrowding.
- Remove steak from skillet: Transfer the cooked steak bites onto a plate and set aside while you prepare the garlic butter sauce.
- Make garlic butter sauce: Lower heat to medium and add the butter to the same skillet. Once melted, stir in the minced garlic and red pepper flakes. Cook for about 30 seconds, stirring constantly, until the garlic becomes aromatic and just begins to brown, being careful not to burn it.
- Toss steak with sauce and garnish: Pour the garlic butter sauce over the steak bites in the skillet and toss well to coat evenly. Sprinkle with chopped fresh parsley before serving.
Notes
- Pat the steak dry before cooking for a better crust by removing moisture.
- Use a hot pan and don’t stir the steak pieces too soon to allow proper searing.
- Add garlic after the steak to prevent burning the garlic.
- Do not overcrowd the pan; cook steak in batches if necessary to maintain heat and sear quality.
- Red pepper flakes are optional but add a nice spicy kick.
