Fruit Salad:
- 1 lb. strawberries, sliced or diced
- 1 lb. fresh pineapple, diced
- 3 mandarin oranges, peeled, segmented & cut in half
- 4 kiwis, peeled & diced
- 1-1 1/2 cups blueberries (about 12 ounces)
Honey-Lime Poppy Seed Dressing:
- 3 limes, juiced
- 3 tsp honey
- 1/2 tsp poppy seeds
Instructions
- Make the dressing. Whisk lime juice, honey, and poppy seeds in a small bowl; set aside.
- Assemble the salad. Combine strawberries, pineapple, mandarin oranges, kiwis, and blueberries in a large bowl.
- If serving immediately: Pour desired dressing amount over the fruit and toss to coat.
- If waiting to serve: Cover the bowl and refrigerate for at least 1 hour. Toss with dressing before serving.
