Caramelized Onions:

  • 2 tbsp butter or bacon grease
  • 1 large white onion, cut in half lengthwise and thinly sliced
  • Salt
  • 1 tsp fresh thyme leaves

Meatloaf:

  • 1 lb ground beef
  • 1 lb ground pork or another lb ground beef
  • 1 cup ground pork rinds or 1/2 cup almond flour
  • 2 tsp onion powder
  • 3/4 tsp black pepper
  • 1 large egg
  • 4 ounces Gruyere cheese, grated

Instructions

  1. Caramelized Onions: In a large skillet over low heat, melt the butter or bacon grease. Add sliced onions, salt, and cook until soft and golden brown. Stir in thyme, then set aside.
  2. Meatloaf: Preheat oven to 350F. Combine ground meat, pork rinds, onion powder, pepper, salt, egg, and half of caramelized onions. Form into a loaf on a baking sheet. Bake for 40-50 minutes at 160F internal temperature. Top with cheese and remaining onions. Melt cheese in warm oven for 5 minutes.
