For Making Caramel

- 1 tsp Vanilla Extract
Instructions
- Preheat oven to 200 degrees C: Place the ramekins in a baking pan with high sides.
- Make caramel: Heat sugar and water in a saucepan until it turns into caramel. Pour into moulds.
- Prepare custard: Mix cornstarch, sugar, milk, and agar agar. Cook until thickened. Add vanilla.
- Assemble: Pour custard over caramel in ramekins. Bake in a bain-marie for 30 minutes.
- Cool and chill: Let the custard cool, then refrigerate for at least 4 hours before unmolding and serving.
