Description

Celebrate Halloween with these Easy Jack-o’-Lantern Quesadillas featuring tortillas cut into spooky pumpkin faces. Choose between a classic cheesy filling or a sweet pumpkin purée blend, cooked to crispy perfection on the stovetop for a fun and festive meal or snack.

Ingredients

Scale

Basic Ingredients

  • 4 tortillas (flour, whole wheat, or any preferred type)

For Cheese Quesadilla Filling

  • Shredded cheese (cheddar, Monterey Jack, or a blend)

For Sweet Pumpkin Quesadilla Filling

  • Pumpkin purée
  • Honey (drizzle)
  • Ground cinnamon (dash)

Instructions

  1. Prepare the Jack-o’-Lantern Faces: Cut out jack-o’-lantern face shapes from the tortillas. Each quesadilla needs one face tortilla, so prepare the number required. Remove the cutout pieces carefully and set the face tortillas aside.
  2. Add Filling to Base Tortillas: On the non-face tortillas, spread your chosen filling. For savory, use shredded cheese; for sweet, combine pumpkin purée with a drizzle of honey and a dash of ground cinnamon.
  3. Cook Face Tortillas: Heat a pan over medium heat and place the jack-o’-lantern face tortilla in it. Cook for 2-3 minutes until warmed through and slightly crispy. Remove and set aside.
  4. Cook Filled Tortillas: In the same pan, place the filled tortillas and cook until the cheese melts or the sweet filling is warm, about 2-3 minutes.
  5. Assemble Quesadillas: Carefully place the cooked jack-o’-lantern face tortilla on top of the filled tortilla. Continue cooking for another 1-2 minutes until the bottom tortilla is browned and crispy. Avoid flipping to prevent filling from spilling out.
  6. Serve: Gently slide the quesadilla onto a plate and serve warm. Optional sides include guacamole, salsa, or sour cream for savory quesadillas; maple syrup pairs well with the sweet pumpkin version.

Notes

  • Classic Cheese: Use a blend of cheddar and Monterey Jack cheese to make the pumpkin face stand out.
  • Protein Power: Add grilled chicken or black beans for a heartier meal while using cheese to bind the filling.
  • Veggie Delight: Add diced bell peppers, onions, or spinach to the cheese filling for extra color and nutrition.
  • Spooky Salsa: Serve with chunky tomato salsa or guacamole for a fresh and zesty contrast.
